A Potato and Pickled Beet Salad, With Rich Anchovy Dressing

I WAS WANDERING AROUND MY POTATO PATCH, out in the country last week, when I came upon some pretty beets growing nearby. I leaned down and plucked them from the fragrant soil, pushed back my muslin bonnet, lifted them to my face, breathed in their earthy scent, and said: I shall make a salad with you, pretty beets.
